Hakata's Food And Culture Museum ”HAKUHAKU”

Experience the food and culture of Hakata in this museum operated by Fukuya, Fukuoka's first mentaiko (spicy cod roe) manufacturer. In one corner of the museum is a display that introduces Yamakasa, one of the three major festivals in Hakata. There is also a store where you can buy local specialties of Fukuoka and also a cafe where you can eat set meals featuring mentaiko in them.

You can join a factory tour and learn about the mentaiko making experience. What goes into mentaiko? How is it made? How long have people been eating it? Learn the secrets and history of mentaiko that you may or may not know. You can also partake of a hands-on activity to make your own original mentaiko.

The factory tour will take you through mentaiko’s production process focusing on three sections: the pickling room, the weighing room, and the packaging room.

Visitors can observe the mentaiko production process through a glass window. You can see the staff's skillful weighing of the mentaiko as they are supported by a world-first weighing machine. While soft and fragile, the machine handles the cod roe as gently as possible, as if they were a pair of human hands.

The mentaiko produced here are carefully checked and packed.

Before shipment, the cod roe is rigorously inspected to both ensure the roe has not been contaminated by foreign substances and that it is has been otherwise properly packaged in order to ensure the safety of the final product.

Try to make your own mentaiko, the only one of its kind in the world!

Make your own mentaiko (spicy cod roe) by choosing the level of spice you’d like in your mentaiko. It takes about 30 to 40 minutes to make three pieces (about 100 grams) of mentaiko. You're welcome to join this tour individually or in groups!

Adjust the spiciness of your mentaiko.

You can change the spiciness of your mentaiko by adjusting the amount of chili peppers or adding other toppings. The cod roe is then marinated in seasoning liquid. By following this process you are able to make a mentaiko that is tailor made to your tastes. The entire process takes about 40 minutes.

Name your mentaiko to complete the process.

Marinated mentaiko should be matured in the refrigerator for two days before consumption. Mentaiko can be taken home together with a frozen gel pack to keep it cold and fresh. Mentaiko can be carried around for about 8 hours in spring and summer and about 15 hours in fall and winter.
